Ingredientes: Para 4 Personas
1 conejo (troceado)
2 puerros
2 hojas de laurel
2 dientes de ajo
1 pimiento verde
¼ pimiento rojo
5-6 champiñones
Zumo de medio limon
2-3 patatas
Vino blanco (33cl)
Caldo de carne (33cl)
4 cucharadas de aceite de oliva virgen extra
1 copa de brandy
Sal
Pimienta (al gusto)
1 huevo
Hilos de azafrán (para adornar
Preparación:
Paso 1:
En primer lugar, saltear los trozos de conejo, previamente salpimentados, en una
Cazuela con un poco de aceite de oliva. Unos 3 a 5 minutos y reservamos.
Corta los puerros en rodajas finas, los pimientos los champiñones y el ajo.
Pon el huevo a hervir por unos 15 minutos, que quede duro.
Paso 2:
Calienta el aceite en una olla, machaca los ajos y una vez que el aceite esta caliente pones
los ajos, el puerro y los pimientos cocina unos 5 minutos y agrega los champigñones.
Agrega el brandy, las hojas de laurel la sal y la pimienta cocina unos 5 minutos agrega el
vino y cocina unos 10 minutos, baja el fuego a medio agrega el conejo el caldo y el zumo
de limon (este es el momento apropiado para echar las patatas troceadas a gusto) deja
cocinar por unos 35-40 minutos, agrega agua si ves que la salsa se va consumiendo. Retira
del fuego y deja reposar.
Paso 3:
Para adornar abre el huevo duro y desmenuza la yema, coloca el conejo en donde lo vayas a servir
y échale esta yema desmenuzada por encima y luego los hilos de azafrán,
verás que bien queda!!
Como el conejo queda bien tanto con vino blanco como el tinto,
queda a tu elección, yo prefiero un tinto suave. Esta receta se puede servir con un arroz
unas patatas guisadas o al gusto con unas patatas fritas.
No olvidar el pan para esa maravillosa salsa!!!

Ingrediënten : voor 4 personen
1 konijn ( in stukken)
2 preien
2 laurierblaadjes
2 teentjes knoflook
1 groene paprika
¼ rode peper
5-6 paddenstoelen
Sap van een halve citroen
2-3 aardappelen
Witte wijn ( 33cl )
Runderbouillon ( 33cl )
4 eetlepels olijfolie
1 glas cognac
zout
Peper ( naar smaak )
1 ei
Saffraandraadjes ( voor de garnering)
Bereiding:
Stap 1
Schroei de stukken konijn dicht in een pan met een beetje olijfolie. (ongeveer 3-5 minuten)
Voeg zout en peper toe en zet opzij.
Snij de prei, de paprika, de champignons en de look in dunne plakjes.
Kook een ei gedurende 10-15 minuten tot ze hardgekookt is.
Stap 2 :
Verhit de olie in een pan , plet de gesneden knoflook.
Voeg de knoflook, de prei en paprika toe zodra de olie heet genoeg is.
Kook ongeveer 5 minuten, voeg dan de champignons, de cognac, de laurier,
het zout en de peper toe.
Laat 5 minuten sudderen.
Voeg de wijn toe en kook 10 minuten.
Zet hierna het vuur lager ( medium)
Voeg het konijn, de bouillon en het sap van de halve citroen toe.
Ook de in stukken gesneden aardappelen mogen er nu bij.
Stoof voor ongeveer 35-40 minuten.
Als de saus te dik wordt, voeg dan wat water toe.
Neem van het vuur en laat het konijn rusten.
Stap 3 :
Om het gerecht te versieren open het ei en verbrokkel de dooier over het konijn.
Verspreid de saffraandraden over het gerecht tot je een mooi resultaat hebt !!
Bij konijn past zowel een rode of witte wijn … aan u de keuze.
Dit recept kan worden geserveerd met rijst, gestoofde aardappelen of frietjes .
Vergeet het brood niet te serveren voor de heerlijke saus.

Rabbit stewed in brandy
English:
Ingredients: Serves 4
1 rabbit (cut into pieces)
2 leeks
2 bay leaves
2 cloves of garlic
1 green pepper
¼ red pepper
5–6 button mushrooms
Juice of half a lemon
2–3 potatoes
White wine (33cl)
Beef stock (33cl)
4 tablespoons of extra virgin olive oil
1 glass of brandy
Salt
Pepper (to taste)
1 egg
Saffron threads (to garnish)
Preparation:
Step 1:
First, sauté the pieces of rabbit – which have been seasoned with salt and pepper – in a
casserole dish with a little olive oil. Cook for about 3 to 5 minutes, then set aside.
Slice the leeks thinly, and chop the peppers, mushrooms and garlic.
Boil the egg for about 15 minutes until hard-boiled.
Step 2:
Heat the oil in a saucepan, crush the garlic and, once the oil is hot, add
the garlic, leek and peppers; cook for about 5 minutes, then add the mushrooms.
Add the brandy, bay leaves, salt and pepper; cook for about 5 minutes, then add the
wine and cook for about 10 minutes. Reduce the heat to medium, add the rabbit, the stock and the
lemon juice (this is the right time to add the chopped potatoes, to taste), and leave
to cook for about 35–40 minutes, adding water if you notice the sauce is reducing too much. Remove from the heat and leave to rest.
Step 3:
To garnish, crack open the hard-boiled egg and crumble the yolk; place the rabbit on the plate where you’ re going to serve it,
sprinkle the crumbled yolk over the top, followed by the saffron threads –
you’ll see how lovely it looks!!
As the rabbit goes well with both white and red wine, it’s up to you –
I prefer a mild red.
This recipe can be served with rice, some stewed potatoes or, if you prefer, some chips.
Don’t forget the bread to mop up that wonderful sauce!!!
