El plato estrella de la cocina gallega. Con lo mejor de la huerta y la mejor carne de cerdo. Ideal para los fríos días de invierno, es un plato contundente que podrás preparar en tu casa cómodamente con todos los ingredientes que te enviamos y siguiendo estas instrucciones:

Ingredientes cocido gallego para 4 personas
- Garbanzos 250 gr. aprox.
- Lacón salado 500 gr. aprox.
- Panceta salada 300 gr. aprox.
- Costilla de cerdo salada 500 gr. aprox.
- Cacheira (cachucha o cabeza de cerdo) 400 gr. aprox.
- (1/2 pollo troceado) 400 g aprox.
- 3 Chorizos
- Patatas 500 gr. aprox.
- 2 Repollos, aproximadamente 3 kg.
- Unto de cerdo
Pasos
1. 24 horas antes (o 36 si no te gusta tan salado) antes pon a desalar el lacón, la panceta, la costilla y la cacheira. Para ello, introdúcelos en un recipiente, cúbrelos con agua y cámbiala cada 6 u 8 horas.
2. La noche anterior deja los garbanzos en remojo.
3. Pon agua en una olla grande. Cuando empiece a hervir añade el lacón, la panceta, la costilla, la cacheira, un trocito de unto y los garbanzos (yo los garbanzos los pongo dentro de un saco o redecilla especial para legumbres. De esta forma cuando veo que los garbanzos están listos los puedo sacar sin problemas, y las carnes se siguen cocinando).
4. Deja que cueza todo a fuego medio durante 1 hora y media – 2 horas más o menos, espumando de vez en cuando el caldo para quitar la grasa.
5. Comprueba el punto de sal del caldo por si fuese necesario añadir una poca.
6. Mientras cuece la carne, aprovecha para lavar bien el repollo. Para ello utiliza abundante agua y un poco de vinagre, para asegurarte que no queda ningún bichito pegado a la verdura.
7. Vete sacando las carnes a medida que se vayan haciendo. Primero la panceta, luego la costilla, la cacheira y por último el lacón. Toda esta carne la retiras a una fuente mientras se hace el resto del cocido.
8. En este momento puedes sacar un poco del caldo donde has cocido la carne para otra olla y utilizarlo para hacer una sopa. La sopa de cocido tiene un sabor espectacular.
9. En el caldo que queda en la olla grande, añade el repollo, las patatas enteras y los chorizos. Déjalos al fuego aproximadamente 20-30 minutos controlando la cocción y el punto de sal, y ya tendrás el cocido listo.
La presentación del cocido es importante. Presenta las carnes de cerdo en una fuente, y las verduras en otra. Los garbanzos y los chorizos troceados pueden ir aparte.
Consejo para desalar
Para desalar las partes saladas del cerdo, bastará con sumergirlas en agua fría durante al menos 24 horas (si son piezas muy grandes, por ejemplo un lacón o una cacheira, quizás necesiten hasta 48 horas), cambiando el agua a menudo. Ingrediënten cocido gallego voor 4 personen
- Bonen witte of Kikkererwten 250 gr. ong.
- Varkens schouder 500 gr. ong.
- Gezouten spek 300 gr. ong.
- Gezouten ribben 500 gr ong.
- Varkens kop (gekapt) (eventueel vervangen door
- een 1/2 kip in stukken) 400 gr ong.
- 3 Chorizos
- Aardappelen 500 gr. ong.
- 2 Savooi kolen , ongeveer 3 kg
- Varkens vet
Stappen
1. 24 of 36 uur ervoor het vlees in water laten ontzouten het water om de 6 uur vervangen. Zorg ervoor dat alles goed onder water staat.
2. De gedroogde bonen of kikkererwten laten we een nacht opzwellen in een emmer water.
3. We vullen een grote pot met water . Als het water begint te koken voegen we de schouder toe en de rest van het vlees we doen onze bonen of kikkererwten bij.
4. Alles op een matige vuur laten koken ongeveer 1 ½ tot 2 uur. Af en toe ontvetten.
5. Bekijk of het gerecht naar je smaak is wat betreft zoutgehalte anders zout naar smaak toevoegen.
6. Ondertussen nemen we onze savooi en snijden hem in 4 stukken elk en wassen hem grondig zodat er geen zand in zit of andere ongedierte (je kan azijn in het water doen om ervoor te zorgen dat er geen diertjes in zitten).
7. Naar mate het vlees gaar is nemen we uit de pot en bewaren we ze in een schaal.
8. Je kan nu een beetje van de bouillon uit de pot nemen en in een andere pot doen om daarna een heerlijke soep te maken.
9. In de overgebleven bouillon doen we nu de 3 chorizos de savooi de aardappelen en we laten alles een 20 minuten koken dan doen we het vlees er terugbij om terug op te warmen na 10 minuten is het klaar om te serveren.
De presentatie is belangrijk doe de groenten en aardappelen in een schotel en het vlees in een andere de chorizos en het spek mogen in de schaal met de groenten voor het zicht.
Tip om te ontzouten
Om het gezouten varkensvlees te ontzouten volstaat het om alles ongeveer 24 uur in water onder te dompelen als ze niet te groot zijn, als het een varkensschouder betref die ingezouten is heb je 36 uur nodig, zorg en voor dat je het water om de 6 uur veranderd dan heb je het perfecte vlees.

Ingredients for Galician cocido for 4 people
· Chickpeas: approx. 250 g.
· Salted pork shoulder: approx. 500 g
· Salted pork belly: approx. 300 g
· Salted pork ribs approx. 500 g
· Cacheira (cachucha or pig’s head) approx. 400 g
· ( half a chicken, cut in to pieces ) approx. 400 g
· 3 Chorizo sausages
· Potatoes approx. 500 g
· 2 cabbages, approx. 3 kg
· Pork lard
Steps
1. 24 hours beforehand (or 36 if you don’t like it quite so salty), start desalting the pork shoulder, pancetta, ribs and cacheira. To do this, place them in a bowl, cover them with water and change the water every 6 to 8 hours.
2. The night before, soak the chickpeas.
3. Fill a large saucepan with water. When it starts to boil, add the pork shoulder, pancetta, ribs, cacheira, a small piece of lard and the chickpeas (I put the chickpeas in a special bag or mesh bag for pulses. That way, when I see that the chickpeas are ready, I can remove them easily, whilst the meat continues to cook).
4. Leave everything to simmer over a medium heat for about 1½–2 hours, skimming the stock from time to time to remove the fat.
5. Check the stock for salt and add a little more if necessary.
6. Whilst the meat is cooking, take the opportunity to wash the cabbage thoroughly. Use plenty of water and a little vinegar to ensure there are no insects left clinging to the vegetable.
7. Remove the meat as it becomes cooked. First the panceta, then the ribs, the cacheira and finally the lacón. Transfer all this meat to a serving dish whilst the rest of the stew is cooking.
8. At this point, you can ladle some of the stock in which you’ve cooked the meat into another saucepan and use it to make a soup. Cocido soup tastes absolutely delicious.
9. Add the cabbage, whole potatoes and chorizo sausages to the stock remaining in the large saucepan. Leave them to cook for approximately 20–30 minutes, keeping an eye on the cooking and seasoning, and your cocido will be ready.
The presentation of the stew is important. Arrange the pork on one serving dish and the vegetables on another. The chickpeas and chopped chorizo can be served separately.
Tip for desalting
To desalt the salted parts of the pork, simply soak them in cold water for at least 24 hours (if they are very large cuts, such as a lacón or a cacheira, they may need up to 48 hours), changing the water frequently. Once the time is up, rinse the meat under running tap water and cook it
