Ingredientes:
Para 4 Personas
- 1 Cebolla
- 1 Cucharada de Maicena (Harina de Maíz)
- 175 ml. de Vino Pedro Ximenez(porto blanco o marsala)
- 65 g. de Pasas
- 250 ml. de Caldo de Pollo
- 1 Cucharada de Azúcar
- Aceite de Oliva
Preparación:
Para preparar nuestra salsa al Pedro Ximénez comenzaremos por el ingrediente que más tarda en cocinarse y esa es la cebolla.
Debes pelar la cebolla y partirla como más te guste, en brunoise o «cuadraditos» o en juliana, que es cuando vas sacando pequeños gajos y te queda alargadita. Este último es mi corte preferido para esta salsa, porque después queda preciosa acompañando a la carne, pero eso va en los gustos de cada uno.
Una vez tengamos la cebolla preparada la llevaremos a la sartén con un poquito de aceite. Un buen truco para la cebolla se poche antes es añadirle un poquito de sal y cocinarla con la sartén tapada. de esta forma ahorraremos un poquito de tiempo y la tendremos hecha en pocos minutos.
Recuerda que para «pochar» la cebolla el fuego debe estar bajito, lo que pretendemos es que se ablande y se ponga un poquito transparente, de lo contrario corres el riesgo de que se queme y estropee el plato. Es muy fácil, ya verás.
Cuando veas que la cebolla está hecha, le pones la harina de maíz o maicena y la mueves un poquito. También puedes poner harina normal, no cambia el resultado final del plato.
A continuación le añadiremos el vino dulce, las pasas y el azúcar. Lo dejamos cocinarse un momento y le pondremos el caldo de pollo.
Ya solo queda esperar a que la salsa vaya espesando. La cocinaremos moviéndola de vez en cuando hasta que veas que está más gordita.

Bereiding:
Om onze Pedro Ximénez saus te bereiden, beginnen we met het ingrediënt dat het langst nodig heeft om te koken en dat is de ui.
Pel de ui en snijd hem zoals je wilt, in brunoise of “vierkantjes” of in julienne, waarbij je kleine partjes snijdt en een langwerpige vorm krijgt. Dit laatste is mijn favoriete snit voor deze saus, omdat het mooi staat bij het vlees, maar het is aan ieders smaak.
Zodra de ui klaar is, doe je hem in een koekenpan met een beetje olie. Een goede truc om de ui eerst te laten pocheren is om een beetje zout toe te voegen en hem te laten bakken met de koekenpan afgedekt. op deze manier besparen we een beetje tijd en is hij in een paar minuten klaar.
Vergeet niet dat, om de ui te “pocheren”, het vuur laag moet staan, omdat we willen dat hij zacht wordt en een beetje doorzichtig, anders loop je het risico dat hij aanbrandt en het gerecht bederft. Het is heel gemakkelijk, je zult het zien.
Als je ziet dat de ui gaar is, voeg je de maïzena toe en roer je het een beetje door. Je kunt ook gewone bloem gebruiken, het verandert niets aan het eindresultaat van het gerecht.
Voeg dan de zoete wijn, Rozijnen en suiker toe. Laat even koken en voeg de kippenbouillon toe.
We hoeven alleen nog maar te wachten tot de saus is ingedikt. We koken de saus door af en toe te roeren totdat je ziet dat hij dikker wordt.

• 250 ml. of Chicken Broth

Preparation:
To prepare our Pedro Ximénez sauce, we'll start with the ingredient that takes the longest to cook: the onion.
You should peel the onion and cut it however you prefer, either into brunoise or "small cubes," or into julienne, which is when you cut it into thin strips, leaving it nice and long. The latter is my favorite cut for this sauce because it looks beautiful alongside the meat afterward, but that comes down to personal preference.
Once we have the onion ready, we'll put it in the frying pan with a little oil. A good trick to make the onion soften sooner is to add a little salt and cook it with the pan covered. This way, we'll save a bit of time and have it ready in just a few minutes.
Remember that to "sweat" the onion, the heat should be low. What we want is for it to soften and become slightly translucent; otherwise, you risk burning it and ruining the dish. It's very easy—you'll see.
When you see that the onion is ready, add the cornstarch and stir it a little. You can also use regular flour; it doesn't change the final result of the dish.
Next, we'll add the sweet wine, the raisins, and the sugar. Let it cook for a moment, then add the chicken stock.
All that's left is to wait for the sauce to thicken. Cook it, stirring from time to time, until you see that it has become thicker.
