Gambas a la gabardina - Gambas met een jasje - Battered prawns
Nederlands↓ - English↓
Español:
Ingredientes:

Ingrendienten:
- 500 g. garnalen (indien mogelijk uit Huelva)
- 125 g. universele tarwebloem
- 100 ml. Bier
- 1 ei
- 1 koffielepel chemische gist (bakpoeder)
- ½ koffielepel kleurstof of gemalen kurkuma
- Om te bakken: zonnebloemolie of milde olijfolie
- Zout (naar eigen smaak)
Bijgerecht: 100 ml zelfgemaakte mayonaise
Recept

We reserveren.

We
We

geven.

Gambas a la gabardina - Gambas met een jasje - Battered prawns
English:
Ingredients:
• 500 g. shrimp (preferably from Huelva)
• 125 g. all-purpose flour
• 100 ml. beer
• 1 M egg
• 1 teaspoon baking powder
• ½ teaspoon food colouring or ground turmeric
• For frying: sunflower oil or mild extra virgin olive oil
• Salt (to taste, to each household's preference)
• Accompaniment: 100 ml. homemade mayonnaise
Recipe
for battered prawns:
To prepare the Orly batter.
1. We peel the shrimp, removing the head and part of the rest of the body. We

the tail part so that we can cook and eat them easily later. We set aside.
2. To prepare this very simple Orly pasta, first add the flour to a bowl. To
prepare this simple Orly batter, we first add the flour to a bowl. We pour in
the beer, and then add the rest of the ingredients: egg, yeast, salt to taste,
and yellow food colouring (although you can add turmeric, if you find it, it's
much better).
We mix vigorously until we achieve a slightly thick batter that will then stick perfectly to the shrimp tails. It is important that it doesn't turn into a lump, so add a bit of water if you see that it does. We let the dough rest for 15 minutes, so that the yeast and the beer can take effect.
Frying and final presentation of the battered prawns
1. We pour plenty of sunflower oil into a saucepan and heat it. We pour a
generous amount of sunflower oil into a saucepan and heat it. Make sure it's
very hot but not smoking. This way, the batter will cook quickly and will be
fluffy.
2. We dip the shrimp tails in the Orly batter, letting the excess drip off, and
then we place them in the pot. We dip the shrimp tails in the Orly batter,
letting the excess drip off, and then transfer them to the pot. We fry them
five at a time, so the oil doesn't lose temperature. We move the shrimp so that
they fry on both sides. In about a minute and a half, they will be ready.
3. As soon as we see they are turning golden, we remove them and place them on
paper towels to drain the excess oil. As soon as we see they are turning
golden, we remove them and place them on paper towels to drain the excess oil.
We repeat the process with the rest and a top-notch tapa is ready for our
guests.
4. I recommend serving the shrimp on a plate accompanied by homemade
mayonnaise. I recommend serving the prawns on a plate accompanied by homemade
mayonnaise. A mayonnaise-style sauce with a hint of garlic that pairs perfectly
with the shrimp. A great combination to succeed at home. A way to add even more
charm to the dish, if possible.
