Si quieres que algún plato te recuerde a la cocina marroquí, usa 'ras el hanut'. Esta mezcla de especias, cuyo nombre significa "lo mejor de la tienda"
Mezcla de especias 'ras el hanut'
2 cucharaditas de comino molido
1 cucharadita de cilantro
1 cucharadita de pimienta negra molida
1 cucharadita de clavo molido
1 cucharadita de jengibre en polvo
1 cucharadita de pimentón dulce
Media cucharadita de cayena en polvo
Media cucharadita de canela en polvo
Media cucharadita de cúrcuma
Ingredientes
4 raciones
1 kg de pollo
50 g de almendra cruda pelada
50 g de ciruelas pasas
50 g de uvas pasas
50 g de aceitunas verdes deshuesadas
50 g de aceitunas negras deshuesadas
1 cebolla grande
2 cucharadas ras el hanut o similar
Perjil
Sal marina
Pimienta negra molida
Semillas de cardamomo al gusto
1 vaso de vino blanco
Agua
Aceite de oliva
Pasos de la receta
Salpimentamos el pollo, lo espolvoreamos con ras el hanout y mezclamos muy bien. Dejamos adobando toda la mañana
Hidratamos la mitad de las pasas y dátiles un par de horas antes de cocinar.
En el momento de hacer la comida, freímos el pollo por todos lados en aceite de oliva caliente. Y lo reservamos.
En el mismo aceite, pochamos la cebolla y el ajo. cuando empiece a estar transparente, añadimos el perejil picado.
Pasados diez minutos, agregamos una cucharada de ras el hanout. Lo integramos bien.
Devolvemos el pollo a la cazuela con un 1 vaso de vino blanco.
Deje que evapore el vino unos 3 minutos, echamos los frutos rehidratados y casi cubrimos con agua.
Dejamos unos 30 minutos a fuego suave. Mientras, freímos las almendras.
Retiramos el pollo y trituramos la salsa, con dátiles y pasas incluidos.
Devolvemos el pollo a la cazuela, agregamos el resto de frutos secos, las aceitunas y las almendras y regamos con la salsa. Y ya que haga chup chup unos cinco minutos antes de servir.
Y a comer!!Servir con cous cous o arroz

1 kg kip
50 g gepelde rauwe amandel
50 g gedroogde pruimen
50 g rozijnen
50 g groene ontpitte olijven
50 g zwarte ontpitte olijven
1 grote ui
2 eetlepels ras el hanut of vergelijkbaar
Peterselie
Zeezout
Gemalen zwarte peper
Kardemomzaad naar smaak
1 glas witte wijn
Water
Olijfolie
Bereiding
Kruid de kip met zout en peper, bestrooi met ras el hanout en meng goed. Laat de hele ochtend marineren.
Hydrateer de helft van de sultanarozijnen en pruimen een paar uur voor het koken.
Bak de kip aan alle kanten in hete olijfolie. En zet ze opzij.
Fruit in dezelfde olie de ui en knoflook en voeg de gehakte peterselie toe als de ui transparant begint te worden.
Voeg na tien minuten een lepel ras el hanout toe. Goed mengen.
Doe de kip terug in de pan en een glas witte wijn wacht 3 minuten tot het alcohol verdampt is,doe de gehydrateerde vruchten er bij en bedek het geheel met water.
Bak ongeveer 30 minuten op een laag vuur. Bak ondertussen de amandelen.
Haal de kip eruit en mix de saus in een blender met de pruimen en de sultanrozijnen.
Doe de kip terug in de pan, voeg de rest van de vruchten, olijven en amandelen toe en besprenkel met de saus. En laat ongeveer vijf minuten sudderen voor het opdienen.
Serveer met couscous of rijst.
