Carrilleras de cerdo al vino tinto en olla lenta. -Varkenswangetjes in rode wijn in de slowcooker  - Pork cheeks in red wine in the slow cooker

1 kg carrilleras de cerdo ibérico

3 zanahorias

1 cebolla grande

5 dientes ajo

500 ml vino tinto

50 ml agua (o caldo de carne)

1 pastilla caldo de carne

60 g salsa de tomate concentrado

Sal

Pimienta

Aceite de oliva

Pasos de la receta

Paso 1

Ponemos el vino tinto en un cazo a fuego medio y lo dejamos reducir hasta la mitad. Tardará unos 20 minutos en reducir, tiempo que aprovecharemos para preparar el resto de ingredientes.

Limpiamos las carrilleras de cerdo eliminando la grasa que recubre uno de sus lados, lo hacemos con un cuchillo afilado y con cuidado de solo quitar la grasa y nada de carne.

Paso 2

Salpimentamos las carrilleras al gusto por ambos lados y las marcamos en una sartén caliente con un chorrito de aceite de oliva. Esto nos ayudará a que los jugos de la carne queden en su interior y conseguiremos unas carrilleras muy tiernas y jugosas.

Paso 3

Pelamos las zanahorias, los ajos y las cebollas y troceamos.

Colocamos las verduras en el fondo de la olla, las sazonamos con una pizca de sal y vertemos encima el tomate concentrado. Cubrimos con las carrilleras y finalmente agregamos el jugo que han soltado al sellarlas, la pastilla de caldo desmenuzada, el vino tinto y el agua.

 

Paso 4

Encendemos la olla lenta en BAJA y dejamos cocinar durante 7 horas.

Pasado este tiempo, sacamos las carrilleras y colocamos las verduras y la salsa en el vaso de la batidora. Trituramos muy bien hasta conseguir una salsa suave. Podemos pasarla por el chino si queremos conseguir una salsa más fina, pero no es necesario.

Servimos las carrilleras con la salsa por encima.

1 kg Iberische varkenswangetjes

3 wortels

1 grote ui

5 teentjes knoflook

500 ml rode wijn

50 ml water (of vleesbouillon)

1 blokje runderbouillon

60 g geconcentreerde tomatensaus

Zout

Peper

Olijfolie

Receptstappen

Stap 1

Doe de rode wijn in een pan op middelhoog vuur en laat deze tot de helft inkoken. Het duurt ongeveer 20 minuten om in te koken.  Gebruik  die tijd om de rest van de ingrediënten te bereiden.

Maak de varkenswangetjes schoon door het vet aan één kant te verwijderen, doe dit met een scherp mes en zorg ervoor dat je alleen het vet verwijderd en niets van het vlees.

Stap 2

Breng de wangen aan beide kanten op smaak met peper en zout en bak ze in een hete koekenpan met een scheutje olijfolie. Hierdoor blijven de vleessappen in het vlees en krijgen we zeer malse en sappige wangen.

Stap 3

Schil de wortels, knoflook en uien en hak ze fijn.

Leg de groenten op de bodem van de pot, breng ze op smaak met een snufje zout en giet het tomatenconcentraat erover. Bedek met de wangen en voeg tenslotte het sap toe dat vrijgekomen  is bij het bakken, het verkruimelde bouillonblokje, de rode wijn en het water.

Stap 4

Zet de slowcooker op LAAG en laat hem 7 uur koken.

Haal de wangen eruit en doe de groenten en de saus in het blender. Meng heel goed tot je een gladde saus krijgt. Je kan de saus door een zeef gieten  om een fijnere saus te krijgen, maar dat is niet nodig.

Wij serveren de wangetjes met de saus er bovenop.

1 large onion

5 cloves of garlic

500 ml red wine

50 ml water (or meat stock)

1 beef stock cube

60 g concentrated tomato sauce

Salt

Pepper

Recipe steps

Step 1

Put the red wine in a pan over medium heat and let it reduce by half. It takes about 20 minutes to reduce.  Use that time to prepare the rest of the ingredients.

Clean the pork cheeks by removing the fat from one side; do this with a sharp knife and make sure that you only remove the fat and none of the meat.

Step 2

Season the cheeks with salt and pepper to taste on both sides and sear them in a hot frying pan with a drizzle of olive oil. This will help keep the meat's juices inside, resulting in very tender and juicy cheeks.

Step 3

Peel the carrots, garlic and onions and chop them.

Place the vegetables at the bottom of the pot, season them with a pinch of salt and pour the tomato paste over them. Cover with the cheeks and finally add the juices released when searing them, the crumbled stock cube, the red wine and the water.

Step 4

We turn the slow cooker on LOW and leave it to cook for 7 hours.

After this time, we remove the beef cheeks and place the vegetables and sauce in the blender jug. Blend very well until obtaining a smooth sauce. We can pass it through a fine-mesh strainer if we want to achieve a finer sauce, but it is not necessary.

We serve the beef cheeks with the sauce poured over them.
