El Solomillo de Cerdo a la Castellana es un plato robusto y tradicional, originario de Castilla, España. Se caracteriza por un método de cocción lento que aprovecha los jugos de la carne y el tocino (o jamón serrano) para crear una salsa natural y muy sabrosa, enriquecida con vino blanco, ajo y, a menudo, cebolla. El resultado es un solomillo excepcionalmente tierno y jugoso, con una salsa espesa y profunda, ideal para una comida familiar reconfortante.

Ingredientes:
Para el solomillo de cerdo
1 unidad (aproximadamente 500-600 g) de solomillo de cerdo, en rodajas gruesas (3 cm) o entero.
1/4 taza (50 g) bacon (panceta fresca) o jamón serrano en cubos
1/2 cebolla grande, picada finamente
3 dientes de ajo, picados finamente
1/2 taza (120 ml) vino blanco seco
1/2 taza (120 ml) caldo de carne
1 hoja de laurel
1 cucharada (15 ml) aceite de oliva (solo si es necesario)
Sal y pimienta negra al gusto
Para el sabor y la presentación:
1 cucharadita de harina de trigo (opcional, para espesar)
Perejil fresco picado, para decorar

 

Preparacion:

Prepare el Solomillo y la base:

Sella el Solomillo: Sazona las rodajas (o el solomillo entero) con sal y pimienta. En una cazuela baja o sartén ancha (11-inch / 28cm) con tapa, calienta el tocino/jamón serrano. Sofríe hasta que suelte su grasa y esté dorado. Retira el tocino/jamón con una espumadera y resérvalo, dejando la grasa en la cazuela.

Sella la Carne: Sube el fuego a medio-alto. Sella los trozos de solomillo por todos sus lados hasta que estén bien dorados (aprox. 1-2 minutos por lado). Retira la carne y resérvala. Si el solomillo está entero, sella de la misma manera.

Sofríe la Cebolla y el Ajo: Baja el fuego a medio. Agrega la cebolla y el ajo a la grasa de la cazuela. Sofríe lentamente durante 8–10 minutos hasta que la cebolla esté muy tierna y transparente.

Prepare la Salsa y Cocina Lenta:

Desglasa: Vierte el vino blanco. Sube el fuego y deja que hierva, raspando el fondo de la cazuela. Deja reducir a la mitad (aprox. 2 minutos).  

Crea la Salsa: Agrega el caldo de carne y la hoja de laurel. Si deseas una salsa más espesa, puedes espolvorear la cucharadita de harina sobre la cebolla antes de agregar el vino y cocinar por 1 minuto (roux).  

Termina la Cocción: Vuelve a colocar la carne y el tocino/jamón reservado en la cazuela, asegurándote de que estén cubiertos por la salsa. Tapa la cazuela y cocina a fuego lento durante 15–20 minutos (para rodajas) o 20–30 minutos (para el solomillo entero), hasta que la carne esté tierna y la temperatura interna alcance 145°F (63°C).

Servir:

Reposo y Corte: Retira el solomillo de la cazuela y déjalo reposar 5 minutos. Retira la hoja de laurel de la salsa.  

Emplata: Si cocinaste el solomillo entero, córtalo en rodajas gruesas. Sirve la carne bañada generosamente con la salsa de cebolla y el tocino/jamón.

Decora: Espolvorea con perejil fresco picado.

Solomillo de Cerdo a la Castellana is een stevig en traditioneel gerecht, afkomstig uit Castilië, Spanje. Het wordt gekenmerkt door een langzame bereidingswijze waarbij het vocht uit het vlees en het spek (of serranoham) wordt gebruikt om een natuurlijke en zeer smakelijke saus te maken, verrijkt met witte wijn, knoflook en vaak ook ui. Het resultaat is een uitzonderlijk mals en sappig varkenshaasje met een dikke, diepe saus, ideaal voor een hartverwarmende familiemaaltijd.

Ingrediënten:
Voor de varkenshaas
1 eenheid (ongeveer 500-600 g) varkenshaas, in dikke plakken (3 cm) of heel
1/4 kopje (50 g) spek (verse pancetta) of serranoham in blokjes
1/2 grote ui, fijngehakt
3 teentjes knoflook, fijngehakt
1/2 kopje (120 ml) droge witte wijn
1/2 kopje (120 ml) vleesbouillon
1 laurierblad
1 eetlepel (15 ml) olijfolie (alleen indien nodig)
Zout en zwarte peper naar smaak
Voor de smaak en afwerking:
1 theelepel tarwebloem (optioneel, om te verdikken)
Fijngehakte verse peterselie, om te garneren

Bereiding:

Bereid de ossenhaas en de basis:

Schroei de ossenhaas dicht: Kruid de plakjes (of de hele ossenhaas) met zout en peper. Verhit het spek/de serranoham in een lage braadpan of brede koekenpan (28 cm) met deksel. Bak tot het vet vrijkomt en het spek/de ham goudbruin is. Haal het spek/de ham eruit met een schuimspaan en zet apart, maar laat het vet in de pan zitten.

Schroei het vlees dicht: Zet het vuur op middelhoog. Schroei de stukken ossenhaas aan alle kanten dicht tot ze goed bruin zijn (ongeveer 1-2 minuten per kant). Haal het vlees eruit en zet apart. Als de ossenhaas in zijn geheel is, schroei je deze op dezelfde manier dicht.

Fruit de ui en knoflook: Zet het vuur laag. Voeg de ui en knoflook toe aan het vet in de pan. Fruit langzaam gedurende 8-10 minuten tot de ui heel zacht en glazig is.

Bereid de salsa en laat langzaam koken:  

Blus af: Giet de witte wijn erbij. Zet het vuur hoger en laat het koken, terwijl u de bodem van de pan schraapt. Laat tot de helft inkoken (ongeveer 2 minuten).  

Maak de saus: voeg de vleesbouillon en het laurierblad toe. Als u een dikkere saus wilt, kunt u een theelepel bloem over de ui strooien voordat u de wijn toevoegt en 1 minuut laten koken (roux).

Afbakken: Leg het vlees en het apart gehouden spek/ham terug in de braadpan en zorg ervoor dat ze onder de saus liggen. Dek de braadpan af en laat 15-20 minuten (voor plakjes) of 20-30 minuten (voor de hele biefstuk) op laag vuur garen, tot het vlees gaar is en de interne temperatuur 63 °C bereikt.

Serveren:

Rusten en snijden: Haal de biefstuk uit de braadpan en laat hem 5 minuten rusten. Verwijder het laurierblad uit de saus.  

Opdienen: Als u de hele biefstuk hebt gekookt, snijdt u deze in dikke plakken. Serveer het vlees met een flinke hoeveelheid uiensaus en spek/ham.

Garneren: Bestrooi met versgehakte peterselie.

Solomillo de Cerdo a la Castellana is a hearty and traditional dish, originating from Castile, Spain. It is characterised by a slow cooking method where the moisture from the meat and the bacon (or serrano ham) is used to create a natural and very flavourful sauce, enriched with white wine, garlic, and often also onion. The result is an exceptionally tender and juicy pork tenderloin with a thick, rich sauce, ideal for a heartwarming family meal.

 

Ingredients:

For the pork tenderloin

1 unit (approximately 500-600 g) pork tenderloin, in thick slices (3 cm) or whole 1/4 cup (50 g) bacon (fresh pancetta) or serrano ham in cubes
1/2 large onion, finely chopped
3 cloves of garlic, finely chopped
1/2 cup (120 ml) dry white wine
1/2 cup (120 ml) meat broth
1 bay leaf 1 tablespoon (15 ml) olive oil (only if needed)
Salt and black pepper to taste
For flavour and finishing:
1 teaspoon of wheat flour (optional, for thickening)
Finely chopped fresh parsley, for garnish

 

Preparation:

Prepare the tenderloin and the base:
Sear the tenderloin: Season the slices (or the whole tenderloin) with salt and pepper. Heat the bacon/serrano ham in a low roasting pan or wide frying pan (28 cm) with a lid. Cook until the fat is released and the bacon/ham is golden brown. Remove the bacon/ham with a slotted spoon and set aside, but leave the fat in the pan.


Sear the meat: Set the heat to medium. Sear the pieces of tenderloin on all sides until they are nicely browned (about 1-2 minutes per side). Remove the meat and set it aside. If the tenderloin is whole, sear it in the same way.


Sauté the onion and garlic: Lower the heat. Add the onion and garlic to the fat in the pan. Sauté slowly for 8-10 minutes until the onion is very soft and translucent.


Prepare the salsa and let it simmer slowly:


Deglaze: Pour in the white wine. Turn up the heat and let it boil while scraping the bottom of the pan. Let it reduce by half (about 2 minutes).


Make the sauce: add the beef broth and the bay leaf. If you want a thicker sauce, you can sprinkle a teaspoon of flour over the onion before adding the wine and let it cook for 1 minute (roux).


Baking: Place the meat and the reserved bacon/ham back in the roasting pan, ensuring they are submerged in the sauce. Cover the roasting pan and let it simmer on low heat for 15-20 minutes (for slices) or 20-30 minutes (for the whole steak) until the meat is cooked through and the internal temperature reaches 63 °C.


Serving:


Resting and slicing: Remove the steak from the roasting pan and let it rest for 5 minutes. Remove the bay leaf from the sauce.


Serving: If you have cooked the whole steak, slice it into thick pieces. Serve the meat with a generous amount of onion sauce and bacon/ham.


Garnish: Sprinkle with freshly chopped parsley.


Preparation time 20 minutes (plus 20-30 minutes simmering)
